Xylitol is a sweetener of natural origin called "birch sugar" used as an alternative to white sugar.
Original xylitol is obtained from the bark of deciduous trees, most often birch from Finland:
- it is as sweet as white sugar, but 40% less caloric
- has a low glycemic index - suitable for diabetics
- used for cakes (except yeast), desserts, drinks, sauces, syrups, fruit and vegetable preserves
